Questions

So today I’m trying Pulled Pork in the Instant Pot, or as I like to call it...Insta Pot. One of my porn loins smelled a little strange but it was in my fridge chillin for a week so hopefully it’s ok. However I did make a crap ton of pasta sauce over the weekend. I made spaghetti sauce with this recipe and then I made pizza sauce with this recipe. I even food processed everything so it would be nice and smooth for the kids. Both taste amazing and I cannot wait for the many months of pasta stuff my homegrown goodness will be giving us. 



I also broke my can opener. 

Also these bells are from my garden so that was exciting.

Insta Pot Soup Rides Again

Howdy friends! I survived another week! Yeeeeeehaw! Idk, I’m not a cowboy nor do I play one on tv but whatevs. Last night I tried another Half Baked Harvest recipe....Chipotle Cheddar Corn Chowder. In the instant pot.  As you know, I love the instant pot. I do not love washing the instant pot because as you also know, I am terrible at washing pots. Oh well. At any rate! Here we goooo! 
I half cooked my bacon in the instant pot but then moved to a frying pan because it was sticking and it was irritating me and I was SUPER CRANKY. Then though I did the onions, garlic and corn in the instant pot. NOM NOM. It’s all steamy so you can’t really see. 

It also called for one russet potato of which I did not have so I used Yukon Golds and a few of them (ok 4). I actually think when I make this again I will use even more potatoes.

Anywhoodle you sauté it all in and throw in some chicken stock and the pressure cook it for a  little bit (like 10 min). 

It SAYS to take out half and blend it up and put it back and add in the rest of the ingredients to sauté again and thicken. The rest of the ingredients at this point were cheese and milk. Mmmmmm. I didn’t blend it for the following reasons: 
1. Didn’t feel like taking out the food processor
2. Didn’t feel like washing the food processor after using it and 
3. Basically just those two reasons. 
Then you chop up cilantro and add it in. The recipe called for the bacon to be a topping but I chopped it up little and mixed it in. 
Overall, it came out great! 3/5 people in my family liked it. One that didn’t apparently doesn’t like “flavored liquid” (news to me) and the other one “doesn’t like all of it” which is insane because that kid likes corn, potatoes, cilantro....soooooo? IDK. In conclusion, I created a table in Docs that catalogues the meals the kids/hubs like and ALSO keeps track of new things people hate. One of the kids told me last week he loves mushrooms and why don’t I make stuff with mushrooms? Um. What. 


Anyway. Make this soup. It was tasty. I will make it again but just for me and Jerms because Corn Chowder.

Half Baked, yes I am! JK. Spicy Maple Chix Sandwich

So this evening I decided I would try this Half Baked Harvest Spicy Maple Chicken sandwich with bacon corn...salsa? Topping? Idk let’s see....it’s here! Something about smoky bacon corn....you mix up the bacon with sweet corn and then some paprika and basil. I think you are supposed to add in some blueberries and cabbage. I did not do that because even though I had blueberries that seemed weird to me and I didn’t have cabbage. This was good though. Maybe needed a shade more spice. 

Marinade of maple syrup and this spicy paste which I thought I was going to have to substitute AND SURPRISE I HAD IT IN MY FRIDGE! WOOT! 

Too lazy to go outside to grill so inside grilling. I think I should have doubled my marinade and done it overnight because I don’t think it was as maply or as spicy as I would have liked. 



Also called for pesto mixed with Greek yogurt....however DUN DUN DUN NO GREEK YOGURT AT MY HOUSE SHOCKING! I do, however, have a giant jar of pesto from Costco. 



Then BOOM LAYERED. It was delicious but like I said, the chicken needed a shade more flavor. I would totally make it again. Mmmmmm

‘MERICA

Howdy friends! For date night, Jerms and I went to the always delicious, yet often no participated in A&W. Which is totes weird since it’s like, 10 min away. I cannot ever remember eating in there which means someone will totally text me and be like REMEMBER THAT ONE TIME WE ATE THERE and I will have to be like NO I DO NOT REMEMBER THAT SORRY. 
Anyways. Diet Root Beer (which I love) in a frosty glass. Mmmmmm. 
Jerms was also excited because sometimes diet root beer isn’t great. Theirs is GREAT. And very smooth.

They had sriracha cheese curds. Worth breaking my diet for. “Diet”. I’m not really on a diet, per se. Just trying to not eat my face off so I don’t have to buy new pants YET AGAIN UGH. (Did I mention I got some Joe’s Jeans at goodwill in OR for lik $7. YAY STEAL!) back to the cheese curds. Yes. YES. YAAAASSSSSSS. As a cheese curd connoisseur....(Culver’s, the fair, anywhere that curds are a choice) the spiciness of these was EXCELLENT. Not horribly spicy but way too much for say, Kiki. 

Jerms had a double bacon burger. I had a regular bacon cheeseburger. It was fine. Maybe overlooked? Idk. The cheese curds were the star of the meal. 



Jerms made me take this picture. He said “two bears just enjoying their root beer”. 

All in all, a good date night. We had big fun.

Bad plan

If someone *ahem* (your virtual mom) tells you to make popcorn in a Pyrex bowl in the microwave....well...maybe not....
I stood and stared at it. It had like 20 seconds to go. And then it shattered. Ugh.
