So much cooking...

Let's see, when we last talked, I was making homemade tortillas. Well, since then I made MORE, this time the whole wheat. They didn't come out as good as I would have liked BUT. Perfect in the taco lasagna I vaguely made up. So. First things first. Whole wheat tortillas. I'm having trouble making them thin enough...  
 
 
 
I did have big fun making them though so it was ok. Plus, in a minute we will discuss the taco lasagna. 
I also made mint chocolate chip no churn ice cream. Basically you whip up heavy whipping cream and fold in a can of sweetened condensed milk, then your flavoring. I put in mint extract and chocolate chips. The chips all fell to the bottom but it was fine. 

 
 
Kid approved. WOOHOOO. Mom win #1. Now onto mom win #2. 
So I made up this taco lasagna based on Jeremy telling me his mom used to make taco lasagna. So, me being me I very vaguely googled a recipe and then immediately decided to make up my own. 
So. I cooked a pound of ground turkey. I cooked it with an onion (yellow in this case), some minced garlic and of course cumin, salt, pepper, chili powder, and garlic powder. Then I threw in a can of diced tomatoes and a big can of green chiles and let it simmer for a bit. 
That's when I made the tortillas. Woot! That was yesterday. Then today it was assembly. I lined the bottom of my pan with the tortillas, then a meat layer. I then layered in my cheese mixture (which, I didn't tell you about yet, so it's a container of cottage cheese, an egg, a grating of parm or two and maybe a cup or so of cheddar. Then mixed.) Then more tortillas, more meat, more cheese later and some cheddar on top. I baked at 350 for 30 minutes. BEHOLD. Ok my 10yo took the photos but it was GOOD. Both kids liked it. Jeremy liked it. All of them were surprised I think that they liked it. I was happy!!! Yay!!!
