CHICKENY MCCHICKENY BEER CHICKEN

I'm a smidge behind again this week AGAIN. I went back to work this week and it's been one of those weeks, where it's running from sun up to sun down. A few days ago I dusted off an oldie but goodie I hadn't made in quite some time, crockpot beer chicken. I used that recipe in the link vaguely, basically, it's chicken breasts (I used frozen), a can of beer (I've made this recipe many times with cheap and not cheap beer. This time I used PBR), and Mexican seasonings. I threw in salt, pepper, cumin, chili powder, and paprika. Put it on low and GO TO WORK. No, not that kind of GO TO WORK . Actually go to work. Or the beach or whatever. Come back later (let's say 6-8 hours) and then shred the chicken and put it on tacos or plain or on chips. 
The kids ate it plain and LIKED IT. 
 
 Obviously I made mine into fake nachos with my favorite, El Ranchero chips, some shredded cheese, tomatoes from my friend Jacob's garden (HI JAKE THE SNAKE!!!), and some hot sauce. Worked out like a dream. 
 
Yes I was too lazy to cut those tomatoes. Yes I ate them whole. Yes they were delicious. 

Moving on. I also bought this iced coffee from Super H Mart and DAMN IT WAS DELICIOUS. 
 
It's made in Korea and it's creamy and vanilla-y, and Gav was like MOM CAN I HAVE SOME MORE after I let him try it. He liked it so much he wanted me to see if they had it at Fresh Thyme. Sadly, they did not. Also, he's 7 so sorry child, you may not have lots of iced coffee. 
Mmmmmmmmmmmmmm 
More cooking this weekend I think. Woot!
