When In Doubt Go With Nachos

Tonight's Heavy Metal Cooking Hour was brought to you by one of my favorite bands Ignite. No pun intended. Think I've mentioned this before but I like to cook with loud music as it adds to the excitement. I hadn't been paying attention and just recently discovered that Ignite came out with a new album "A War Against You". My excuse for not knowing? Well their last album was 10 years ago so not like I kept up to date with recent activity or news. So was super excited when I randomly looked them up and found that a new album had been released- I believe in January- so 8 months late on that. But as the saying goes better late than never. If you're into hardcore/heavy but yet melodic music give them a shot. 

Any way back on track to the food as this is a food blog...or so I've been told. We had expiring ground turkey in the fridge that had to be cooked up- possibly it expired a day or two but it was still in good shape. Took a quick stock count and after some debate, I decided while staring at tortilla chips that nachos with ground turkey and  Mexican Street Corn Salad was the leading option.

First up was the Mexican Street Corn Salad which is super easy to make. Pretty much if you look it up and compare recipes they're all identical minus a thing or two.  Pretty much I just go with Mexican Street Corn Salad recipe as its typically the first link in a Google search for Mexican Street Corn Salad. Pretty much made it a lot over the last couple of months that I have it memorized - it really is that simple. You can go two ways with the corn- buy frozen corn and fry it up fairly quickly as in the recipe above or grill up some corn on the grill.  Both ways are still tasty so you can't go wrong either way. Interesting note on this- Karen does not like cilantro, onions, or jalapeno but she eats this without complaint. Not to say she won't put aside pieces of onion, but for the most part she truly enjoys it. I'll pause here so you can get over your surprise.

For the ground turkey, which I feel needs a lot of help flavor wise I went to Flavor Town with the spices. Didn't go overboard quantity wise as nothing was more than a teaspoon- added Adobo, Sazon, cumin, paprika, chili powder, paprika, and oregano. Had some left over green pepper left over so threw that in there as well.

Actually remember to preheat the oven this time. I might have uttered as I was done cooking the ground turkey - "Yeah look at me being professional!" Which was quickly followed up by "What idiot talks out loud to themselves? THIS GUY!" Fairly certain this was all said in my head. I'm sure if you ask Karen she would tell you "That boy is special."  Laid down some nachos on a cookie sheet, added the meat, and topped it off with shredded cheddar cheese.

So pretty much once that was done baking and served- added the Mexican Street Corn Salad on top and a new mayor of Flavor Town was declared. Lily actually loved it and decided she wanted to take some for lunch tomorrow.  I did open a small can of Mexican style pickled spicy carrots as I"m addicted to those . Overall was a very fulfilling meal and thus making this dinner GLORIOUS!
