Always With the Soup...

Yeah I'm still on that soup kick. I blame Tom Skilling aka the weather wizard and the terrible changes we've been encountering. I understand Fall is here but come on bruh ease us into it.  Honestly never had allergies this bad before so all new torture. I think I can sympathize with allergy sufferers more now. So with that in mind wanted some hot soup to help warm up and possibly clear the sinuses. I assume it helps with the sinuses but I'm not a trained professional. BUT I DIGRESS...

So one of Karen's favorite soups growing up was Avgolemono. I've probably had it before and just didn't realize that's what it's called. I apologize my Greek brethrens. Basically its a egg lemon sauce soup usually with rice or orzo in it.  There's some variations with chicken and other vegetables but the standard version is that.  Some reason the soup came to mind and I decided to give it a shot.

Found a recipe for Avgolemono Soup  that just has 5 ingredients and is super easy to make.  Depending on the amount of folks you're trying to feed and your likes, you're going to to want to alter the recipe. I would say as it probably makes about 4 bowls/cups of soup if you go by the recipe. Also I thought using Orzo that 1/4 cup wasn't enough for my liking. So I doubled down (always wanted to use that term) on the broth, eggs, and lemon. For the Orzo I actually used a cup instead of 1/4 cup.

Overall was fairly quick and took less than 1/2 hour to get it done. The reason I doubled/quadrupled the ingredients was to have more than one serving for everyone/to have leftovers and eat again. I think it came out pretty good but I'm biased and have to say that. If I learned anything from the cooking shows I watch you always sell how awesome your food is. One day I want to see someone make something on t.v. and go "Meh it's okay" or "man that's terrible". It'll never happen but would be funny if it did.

Karen was the rock star of this week's cooking- well more like baking- as she made these awesome peanut butter blossom cookies. These things are like crack and are not good if you're trying to avoid eating terrible. Still I highly enjoyed them and ate like a big slob.

Unfortunately I don't have a recipe or pics of Karen making these as she is a maverick and does her own thing without telling folks. That or I was too lazy to ask or pay attention to what she was doing. We'll go with a little bit of column A and a little of column B. Still if you invite her anywhere for a potluck of some sort- make her make these. Will be highly worth it...except for weight loss or healthy eating.
