National Taco Day fell on a Taco Tuesday. I'm fairly certain at least one meal was decided for you on this day. I don't say no to tacos in general so definitely a no brainer. The only decision was whether or not we ordered out or cooked at home. With a flip of a coin it was decided that I would make tacos at home. Just kidding with an upcoming trip to New York this week figured I should save some money.
Being a national holiday decided to go a different route and opted to make Korean beef tacos. During one of my prolonged grocery shopping trips, I had picked up a packet of Korean taco seasoning mix. And why yes it did have the word "NEW" on it.

Fairly simple procedure for the marinade - just put your beef in a bag..PAUSE...with the mix and some water. Shake it up and let it rest for about 1/2 hour in the fridge. For the beef I went with thinly sliced eye round steak. Fairly certain you could also go chicken or pork with this for folks how aren't fans of steak.

The steak being cut thinly cooked fairly quickly . Upon reflection this might have been the first time I cooked using the wok in quite a while. Luckily it was buried in the back of the cabinet. I'm convinced Karen put sets up death traps within her cabinets to keep me out. I didn't break anything but made a lot of noise. I believe she was thoroughly entertained the whole time with me mumbling and whining with questions like "WHY WOULD YOU DO THIS???" while I fished out the wok.

Considering I had a plethora of lime coleslaw from the other day decided it would go well with the Korean themed taco. I thought it might have gone better with chicken or fish, but actually tied in pretty well with the flavor and spiciness (very slight spice) of the mix.

Luckily the ladies of the house actually enjoyed the tacos. I don't usually like to bet on new things with them but it worked out well. On a "SAY WHAT???" moment: Karen ate the tacos...WITHOUT SOUR CREAM! SAAAAAAAAY WHAT??? Yeah I know its crazy but she said it didn't need it. Kudos to you Korean steak tacos!
