Tacos Are All The Craze

One of the positives of Facebook is that folks will randomly share/post recipes. Well really overhead instructional cooking videos. Same thing I suppose. In this instance a friend of mine posted a video from V & V Supremo Foods, Inc. If you grew up in the Chicagoland area, you'll recognize seeing their cheese and/or chorizo in grocery stores...unless you go to Meijer. Once again Meijer has an okay Hispanic aisle Their greatest sin would be the lack of Goya and Sofrito products. Dairy or Chorizo? Not so much. That's a fail Meijer, that's a fail. Not saying V & V Supremo is the top dog in terms of product, but support your local sources. That has been a PSA from Reef.

Let's get back on track Reef. Not a problem reader of this blog I will focus. The overhead cooking video that was shared was for Crispy Potato and Cheese Tacos w/ Lime Coleslaw. Right away it's tacos so a guaranteed yes in my book. Second watching through the video you get two awesome Mexican cheeses- Chihuahua and Cotija cheese. Third reason- mash potatoes.  Healthy option? Negative. A trip to flavor town? Yes. The positives outweighed the negatives and curiosity won out.

If you look at the coleslaw part of the recipe it asks for both red and green cabbage. Having gone to Meijer I only found shredded red cabbage there. I mean they had a head of green cabbage but I wasn't looking to waste all of that. Upon research on the internet- thank you Al Gore for inventing that- there really is no difference between the two outside of color. They taste exactly the same. Unfortunately Meijer failed in the Mexican dairy section so I ended up hitting up Jewel who had both shredded green cabbage and Chihuahua cheese.

The tacos were fairly easy to make and well worth the calories. I really enjoyed it. I will say that the recipe makes a boatload of  lime coleslaw.  Depending on the number of folks you're feeding, you might want to cut that recipe in half for the slaw. Mash potato wise this made 10-12 tacos based on ration. Really not sure why the recipe says 2-4 servings.  Either way would definitely make this again and adjust as needed.
