Quinoa love. Or as Reef says, KEE-NO-AH

Tonight I wanted to make something with lots of veggies and lots of fiber. My tummy gets grouchy, and I've also (mostly) started back up on the healthy eating train and using Myfitnesspal again. My summer of eating is taking its toll and my loose jeans are now tight....boooo. 
So. I found a cheesy, zucchini rice recipe on Pinterest and adapted it with quinoa. Recipe I based it off of, here. So. I sautéed an onion with a bunch garlic. I have the GIANT container of minced garlic from Costco, so I use a baby spoon (SHUT UP MY BABY IS 7) and threw in a few spoonfuls. Then I put in a bag of sliced frozen zucchini that I cut up fresh awhile ago. I put in one cup of quinoa, and two cups of chicken stock. A few tomatoes from my garden. Then I threw the lid on and let it simmer away. When it was finished, I threw in a cup of shredded cheddar Jack. It came out pretty good. 
 
Karen would *probably* like it. Reef for sure. My kids, 99% not. I threw a little hot sauce on top and I think tomorrow when I eat it, I might throw some of those French fried onions on top. Did I mention how much I love cooking? Even when making stuff up or making it all healthy....I love it. Mmmmmmmmmmm
