While checking on our food inventory in the pantry and found a small jar of artichoke hearts. Hummus is fairly simple to make and I never really attempted to use artichoke so pretty much figured why not try it for lunch. Being half Palestinian- or as typically known half Arabian- I do love me some Mediterranean cuisine. Funny enough Karen always shames me for buying too many cans of chickpeas otherwise known as Garbanzo beans. Like I typically come home with a can of them I would say every other grocery trip. LOL not sure why I just always think I need them. Same could be said for green pigeon peas. I mean those are staples in the Reef pantry. Obviously I grew up on it but really hummus is pretty popular and accepted everywhere. Well maybe not so much by Tina as she only tolerates like a spoon of it...once every couple of months...or a year. Who knows?
Anyway like most of the time I just wing it when it comes to the hummus aka no recipe. I mean there are the key ingredients- chickpeas, Tahini, and lime juice- but outside of that its a free for all.
Pretty much didn't add too much more to it and ended up adding in the artichoke hearts, minced garlic, Adobo, and olive oil. If I had to guess and if you want to try it on your own- 1 can of chickpeas (drained), 1/2 cup of Tahini, juice from 1 lime, a small jar of artichoke hearts, 4 cloves of garlic (minced), 1/4 a cup of olive oil, and 1 tsp of Adobo seasoning. Threw it all in the blender and let it do its thing.

Personally I'm more into the thicker version of hummus so I don't add water to it. Depending on your preference you may want to consider adding some if you'd like. In terms of Adobo, I love that more than just adding salt and pepper to things. I think it brings more flavor- clearly as it has more ingredients- but eliminates more salt intake. But in regards to the outcome of the hummus- not to beep my own horn but BEEP BEEP- it came out pretty damn tasty. Ended up eating some with carrot sticks and pretzel chips. Guess it was back to eating healthy. High five to that!
While on a trip to Sam's Club to pick up toilet paper decided to scope out their deli section and to see what they had. To my joyful surprised I saw the return of their Southwest Chicken wrap. For an establishment like Sam's Club this might have to be one of their best food items ever. Unfortunately its been like 2 years since the last time they actually made them in that store. I was fairly stoked to see them and without question ended up buying one- which actually is two full size wraps cut in half. For the healthy eating folks and per Myfitnesspal they are only 190 calories per half.

So the return to healthier options and of one of my favorite wraps I would think makes this a successful Semi-lazy Sunday. I was suggested to try the whooperito so that might be coming up at some point this week.
